1、买回的肥膘肉沸水下锅汆烫，再捞出洗净杂质，控干水分。
2、锅中加入少许的清水烧沸，放入肉丁，小火慢慢炸至微微发黄。
3、再加入葱姜片和几粒八角，炸制肉丁呈金黄色时，关火。趁其还未凉透，撒点盐进去。
4、米饭装在小碗内，淋上2勺酱油、2勺猪油、1勺小葱末、1勺猪油渣拌匀即可。
