1、黄鳝处理好后用油炸，炸久一点，将表皮炸得焦脆；
2、两块姜切碎、两个蒜球切碎、一把紫苏切碎、适量红米椒切碎备用；
3、热锅放少许油将配料炒香，放盐炒匀，再放少许蚝油、料酒；
4、放入炸过的鳝鱼，大火炒入味，起锅前加少许味精即可。
