1、将锅置于旺火上,放入色拉油烧热,放入豆瓣酱炒香,放入白卤汁、腐乳汁、醪糟汁(江米酒)、酱油、葱汁、姜汁;

2、锅烧开后用小火熬浓稠,出锅晾凉,过滤渣为老卤;

3、将鲜活草鱼宰杀,擦干内外水分,连胸鳍取出下两扇肉,切成条;

4、葱切末;

5、取蒸碗,将草鱼肉整齐地放入,加入老卤水,拌匀腌10分钟;

6、放糯米粉、花椒粉、辣椒粉,放笼用旺火蒸10分钟,淋入植物油,撒上葱末即可。
